  Overview

The VTCT Level 3 Diploma in Advanced Professional Cookery is ideal if you aspire to a career as a chef in a professional kitchen. The qualification is based on the National Occupational Standards (NOS) for professional cookery and includes all the elements required for you to work effectively as a professional chef.

This course will equip you with the creativity and passion for all things food and catering. You will learn to prepare and cook culinary dishes to an excellent standard, preparing you for a rewarding career in the Catering industry.

You will study 6 mandatory units:

  • Planning for Preparing, Cooking and Finishing Dishes
  • Food Safety for Catering
  • Advanced Meat and offal
  • Advanced Poultry and game
  • Advanced Fish and Shellfish
  • Advanced Vegetable and Vegetarian Dishes

You will also study:

  • Hot Sauces, Cold Sauces and Dressings
  • Fresh Pasta Dishes

The course will include compulsory trips that you will be required to attend.

You will also be required to attend some twilight and evening sessions.

Entry to this course requires an NVQ Diploma Level 2 in Professional Cookery (Preparation and Cooking) as well as GCSE English and Maths at a grade 4 or C.

Please note that you will be required to purchase and wear a uniform and buy some equipment such as knives. All the necessary uniform can be purchased from the Department throughout July, August and September.

 

Successful completion of this course can lead to progression to employment as a professional chef. You could progress directly into employment in a variety of contexts including:

  • Hotels
  • Restaurants
  • Pubs and Gastro pubs
  • Visitor Attractions
  • HM Prisons
  • Hospitals and Care Homes
  • Cruise Liners

  Fees

This course is a Skills Guarantee course and therefore free for adults depending on salary and prior academic attainment.
