After discovering her passion for cooking at school, Esmee chose Bradford College to take her first steps into the professional culinary world. Having completed both a Level 2 and Level 3 Professional Cookery, Esmee has since progressed into Higher Education at University College Birmingham, while also working in the industry, that earned her the title of Learner of the Year during her Level 3 programme.
Esmee’s decision to study Professional Cookery was shaped by her experiences during secondary school and attending college open days.
“Among one of the many open days I visited, I looked at nearly every course available. Cooking was the only one that really caught my interest from the way the kitchen was set out, to how the course was explained and the opportunities that came with it.”
That first impression was enough to spark a passion that has continued to grow throughout her studies and career so far.
Preparing for the Next Step
Esmee credits her time at Bradford College with giving her the skills, confidence and determination needed to succeed in Higher Education.
“My time at college provided challenges that have shaped who I am as a chef today. The difference in teaching styles, especially at Level 3, really stood out to me. I met some amazing people and learned something new week by week.”
The more advanced techniques and tasks introduced during her Level 3 course confirmed that Higher Education was the right next step. College proved to be a defining moment in Esmee’s journey.
“College was a turning point where I realised this is what I wanted to do. I enjoyed everything from the atmosphere in the kitchen to the amount of effort and time put into every dish served.”
Life at University College Birmingham
Esmee is now studying at the University College Birmingham, where she continues to push herself both academically and professionally.
“Uni provide an entirely new skill set, testing your abilities and offering life‑changing opportunities as you progress.”
Alongside university, Esmee works in the industry at O’Neill’s on Broad Street in Birmingham, gaining valuable hands‑on experience in a fast‑paced, real‑world environment.
Esmee has clear ambitions for the years ahead.
“My future goal is to own my own restaurant, with my own menu of food that I love to cook and eat! I’d also love to teach younger people on the job, as I’ve found this to be one of the best ways to learn and stay motivated.”
Advice for Current Students
For students who may be unsure about their next steps and which path to take, Esmee’s advice is simple and encouraging,
“Just do it. Going to college has been an amazing experience, and coming to university has been a whole new experience. Demanding, yes, however worth every moment. Do your research and put your future in the hands of yourself and nobody else’s!”
